A short brewing guide
- 1Measure. About 2–3g of leaf per 200ml of water — roughly one loose teaspoon.
- 2Heat the water. Match the temperature to the tea — check its card in the catalog above.
- 3Steep. Time it. A minute too long turns delicate teas bitter fast.
- 4Strain and taste. Most leaves, especially oolong and pu-erh, are good for two or three more steeps.
